5 More Fast & Easy Meals for Busy Families

Spring is here and so begins the busy season in our house. Between soccer practice and game schedules, working full-time, writing a blog, running a household and trying to keep my sanity (tall order), I HAVE to plan my meals for the week.

As easy as it would be eat pizza or pick-up something quick from a drive-thru, they are not everyday options for us (although my kids would love it!).

Since winter is slower-paced and I have more time, I have been testing out NEW fast and easy meals with my family. Now, I have an even bigger collection of dinner recipes ready to go that I know will satisfy all tastes.

These dinners are now included in my regular rotation of Dinners to Rotate. I use this printable to reference as I make my menu for the week. This is a huge time saver, as it keeps me from having to look through all of my recipes and Pinterest boards. This printable is part of my Family Planner, available on Etsy.

To help make planning dinners even smoother, I print out a copy of my Grocery List and Meal Planner to begin planning my meals for the week. I do this on the weekend so by Monday, everything is ready for the week ahead.

1. 3 Ingredient Ravioli Bake

Lilly at Instrupix caught my attention immediately with the name of her recipe, 3 Ingredient Ravioli Bake. With only 3 ingredients, I was sold! After I made this recipe, my family was sold too. Not only is this meal simple to make, it’s delicious too. You can easily modify the ingredients to suit your families taste. We like to add sweet Italian sausage to ours.

2. Layered Taco Bake


As much as everyone loves tacos, I do not enjoy making them. They are messy, take tons of prep, and require a lot of ingredients. Brandie @ The Country Cook has changed all of that for me. This Layered Taco Bake is not only delicious, it’s easy to make and not messy! I put everything together when I meal prep on Sundays so all I have to do is bake it in the oven and top it with lettuce and tomatoes.

My family loves the taste and I love that I can once again make them tacos without spending WAY too much time in the kitchen prepping and cleaning-up a mess. A total game changer for me.

3. Buffalo Chicken Sliders


Sara Rose @ A Flavor Journal shares her A-mazing Buffalo Chicken Slider recipe that will keep your family coming back for more! This recipe makes enough for only 2 people but I simply doubled it to make enough for our family.

The secret to making these so quick is using a rotisserie chicken. You can also put all the ingredients together the night before so all you have to do is heat it up and serve. I serve these sliders with apple slices and baked fries or chips.

4. Easy Crockpot Lasagn

This recipe for Easy Crockpot Lasagna is from my own blog and can be quickly put together in a crockpot. When I get home, all I have to do is top it with cheese (as you can see, I LOVE cheese) and it’s ready to be enjoyed.

If I know I won’t have time in the morning to put the lasagna together before heading out the door for work, I prepare the crockpot the night before and place it in the fridge overnight. I’m often running late, but I can manage the time it takes to plug the crockpot in!

5. Sloppy Joes

Carrie @ Eating on a Dime shares this Sloppy Joe recipe that is quick, easy, and super flavorful! I found her recipe as I searched on Pinterest (is there any other way?) for a sloppy joe recipe that reminded me of my mom’s growing up. Simple, yet very tasty and loved by everyone!

My favorite side dish with Sloppy Joes is my quick homemade macaroni and cheese. I plan on sharing this recipe with you soon!
