There is one item that is ALWAYS on the menu for Thanksgiving and Christmas morning…sausage, egg, and cheese breakfast casserole. This easy, make-ahead meal is perfect for ANY gathering of friends and family.

And who doesn’t like easy?

I started this blog to help others find balance in their lives. Two particular mornings I need help finding my own balance are Thanksgiving (I host) and Christmas morning (I like to be fully present when my children open-up their gifts and not in the kitchen covered in syrup).

Having this casserole ready to put in the oven motivates me to get up and get moving and allows me to focus on the day ahead. No more worrying about what’s for breakfast.

I first made this casserole about 25 years ago for a staff breakfast. I wanted to do something other than the usual donuts and juice and it was a huge hit. My mom had made this recipe a few times before and so what follows is my adaptation to a recipe that is guaranteed to be a favorite at any gathering (whether big or small).

The recipe is simple to make and can be easily adapted to meet your family’s taste. Change out the type of bread, cheese, and sausage to create your own version. We enjoy our casserole covered in a little bit of syrup and a nice cup of our favorite coffee, Highlander Grogg.

Leftovers are also nice to have before heading out the door for some Black Friday shopping so be sure to save yourself a piece before it’s all gone!

Sausage, Egg, & Cheese Casserole

This make-ahead breakfast casserole is delicious, easy to make, and big enough to serve at gatherings.

Ingredients

  • 1 pkg. Ground Sausage maple or plain
  • 8 slices Bread any kind
  • 8 Eggs
  • 2 1/2 cups Milk
  • 2 cups Sharp Cheddar Cheese shredded
  • Salt (to taste)
  • Pepper (to taste)
  • 1/2 tsp Ground Mustard
  • 1/2 stick Butter
  • Syrup Optional

Instructions

  1. Brown sausage and drain excess grease. 

  2. While sausage is cooking, stack bread and cut into squares using a sharp knife. Set aside.


  3. Whisk together eggs and milk.

  4. Use cooking spray to cover 2 quart casserole dish. Cover bottom of dish with half of the bread and sausage, 1/2 cup of cheese, salt, pepper, and dry mustard. Repeat layers.

  5. Pour egg mixture on top, making sure to cover the entire casserole.  Top with slices of butter. Cover dish and place in refrigerator overnight.

  6. Next morning, preheat oven to 350 degrees. 

  7. Bake uncovered for 40 minutes or until casserole is cooked through. 

  8. Top casserole with remaining cheese and place back in oven for 5 minutes or until cheese is melted.
