Roasted Red Potatoes

Need an easy, delicious way to serve potatoes? Try these roasted red potatoes and your family will thank you AND ask for more.
For this recipe, you only need a few ingredients and 30 minutes of cooking time. For those of us who like to meal prep, these potatoes can be prepared ahead of time and kept covered in the fridge until you’re ready to cook.
I like to use red potatoes but you can also use the Yukon Gold potatoes if you prefer (or a mix of the two). Begin by cutting the potatoes into either fourths or eighths, depending on their size. Place the potatoes in a large bowl and drizzle with olive oil. Sprinkle the potatoes with salt, pepper, and garlic power and stir.
This recipe can be modified by sprinkling the potatoes with parmesan cheese, rosemary, or any other additional seasonings you like.
Pour the potatoes onto a large cookie sheet covered with cooking spray. Spread the potatoes out into a thin layer to help them cook evenly.
Place the potatoes in the oven on 450 degrees for 15 minutes. After 15 minutes, stir the potatoes and put back in the oven for 15 more minutes. The secret to roasting vegetables is to cook them at a high temperature quickly. This method brings out the best flavor for any vegetable you roast.

Ingredients
- 6-8 red potatoes
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/4 tsp pepper

Preheat oven to 450 degrees.

Wash and cut potatoes into fourths or eighths, depending on the size of the potatoes.

Place cut potatoes into large bowl. Mix together with olive oil, salt, pepper, and garlic powder.

Pour potatoes onto large baking sheet in a single layer.

Bake for 15 minutes and stir. Return to oven for 15 more minutes or until potatoes are brown.
