Chicken and Broccoli Casserole

The return of cooler weather means a return to the comfort food I love to make. This chicken and broccoli casserole has been a family favorite for a long time. Served with a side of rice or macaroni and cheese, this dish satisfies everyone’s appetite.
This meal can be prepped ahead of time and kept in the fridge for 2-3 days before you need it. You can also cook the chicken and broccoli ahead of time to minimize the time it takes to prep. Either way, this meal is delicious!
You can choose to make this recipe with Miracle Whip or mayo depending on your personal preference. Also, I LOVE cheese, especially melted cheese, so you may or may not want to use a full 2 cups in your casserole.
If you have small children who don’t like their food to touch (I speak from experience here), simply leave out some of the chicken and broccoli and serve it separately.
Chicken and Broccoli Casserole
This easy to make Chicken and Broccoli Casserole is one your whole family will love. Make ahead for those busy nights so all you have to do is pop it in the oven for 30 minutes. A warm and satisfying dinner is ready in no time.
Ingredients
- 1 12.6 oz Birds Eye frozen baby broccoli florets
- 3 chicken breasts Cooked and sliced
- 2 cans cream of chicken soup
- 1/2 cup Miracle Whip or Mayo
- 1 tsp lemon juice
- 2 cups shredded sharp cheddar cheese
- 4 slices bread buttered
Instructions

Preheat oven to 350 degrees.

Spray bottom of casserole dish with cooking spray.

Cook broccoli and drain. Arrange in bottom of casserole dish.

Slice up chicken breasts. Place evenly over top of broccoli.

Mix together mayo (or Miracle Whip), lemon juice, and soup. Spread over top of chicken.

Sprinkle with cheese.

Butter each slice of bread and cut them into squares. Place on top of casserole.

Bake uncovered for 30 minutes.
